Birthday Cake
Ingredients Directions

-2 ½ cups sifted cake flour
-1 ½ teaspoon baking powder
-½ teaspoon baking soda
-¼ teaspoon salt
-1 ½ sticks of unsalted butter at room temperature
-1 ½ cups granulated sugar
-3 large eggs
-2 teaspoons vanilla extract
-8 oz buttermilk (whole milk with just a squeeze of lemon juice)

 

 


*Pre-heat oven to 350 degrees
*Prepare baking pans: 2 8 or 9 inch round pans -Lightly grease pans and line with lightly greased parchment paper.
*In a bowl whisk together all dry ingredients except for the sugar and set aside.
*In another bowl, using a mixer on medium speed beat the butter until smooth.
*Slowly add the sugar and continue beating until the mixture is light and fluffy. *Add the eggs one at a time, and then add the vanilla.
*Add the flour mixture in 3 portions alternating with the buttermilk in 2 portions.
*Bake for 40-45 minutes or until lightly golden brown and a toothpick inserted into the center of the cake comes out clean.
Frosting Ingredients Directions
-8 oz unsalted butter
-16 oz Crisco or butter
-2 lbs of confectionary sugar
-2 teaspoons of vanilla extract
-2 tablespoons of water

*Mix together butter and Crisco until well blended – Slowly add confectionary sugar, until all is combined.
*Add vanilla and water mix at high speed until fluffy.



Apple Cinnamon Scones
Ingredients Directions

-2 cups all purpose flour
-1/2 cup white sugar
-2 tsp baking powder
-1/2 tsp baking soda
-1/2 tsp salt
-1 stick butter-chilled
-1 apple-peeled, cored and diced
-1/2 cup heavy cream
-2 Tbsp milk
-2 Tbsp white sugar
-1/2 tsp ground cinnamon

 

*In a large bowl, combine flour, sugar, baking powder, baking soda and salt.
* Cut in butter until the four mixture is crumbly.
* Add diced apple and heavy cream. Stir to form a soft dough.
* Turn dough out onto a lightly floured surface. Knead gently 8-10 times.
* Pat into two 6 inch circles.
* Place on greased baking sheet.
* Brush tops with milk, and sprinkle with sugar and cinnamon.
* Score each into 6 pie-shaped wedges.
* Bake at 425 degrees for 15 minutes, or until brown and risen.
* Serve warm with butter.
You just can't eat only one Brownie! (Makes 24)
Ingredients Directions

-1 cup butter or margarine
-1/2 cups cocoa powder
-2 cups sugar
-4 beaten eggs
-2/3 cup all purpose flour
-1/4 tsp baking soda
-1/2 tsp salt
-2 tsp vanilla extract
-2 cups semi-sweet chocolate chips
-1/2 cup coarsely chopped nuts
(Walnut, Pecan, Macadamia, etc.)

 

*Heat oven to 350 degrees.
*Grease 13x9x2 inch baking pan.
*Melt butter over low heat in a medium saucepan. Add cocoa and sugar. Stir. *Remove from heat. Stir in eggs. Stir together flour, baking soda and salt. Stir into chocolate mixture. Stir in vanilla, chocolate chips and nuts.
*Spread batter into prepared pan.
*Bake 30 to 35 minutes or until brownies begin to pull away from sides of pan and begin to crack slightly, do not underbake *Cool completely before cutting the brownies.

**Makes 24 brownies
